[WHY]

 
 
 

side dish that's easy like your side bish, but also good enough to be your main bish

▹  yummy + gluten-free option to serve during the holidays
▹  substitute + add whatever veggies you have
▹  add smoked salmon for a great breakfast scramble
▹  add salmon, chicken or garlic shrimp for a great post-workout meal

[WHAT]

 
 

▹  1 1/2 cups cauliflower rice (you can buy a premade package of frozen cauliflower rice, or make it yourself with a head of cauliflower and a food processor or cheese grater)

▹  1 lb asparagus (I used white asparagus)

▹  1 large zucchini 

▹  3 eggs (I buy pastured eggs)

▹  1 head of red cabbage

▹  1 clove of garlic

▹  1 lemon

▹  1/2 cup avocado oil

▹  1/2 tsp pink himilayian salt 

 

 

 

[HOW]

▹  thinly chop 1 clove of garlic and wash asparagus

▹  add asparagus and garlic to a large pan with 1/4 cup avocado oil 1/4 cup water

▹  cook on medium heat for 4 minutes to soften; and then set aside

▹  chop red cabbage into thin strips

▹  make zucchini noodles with spiralizer (If you don’t have a spiralizer, you can julienne the zucchini)

▹  if you are using a cauliflower head vs a premade frozen option, rice the cauliflower using a food processor or cheese grater

▹  combine cauli rice, cabbage, zucchini noodles, 1/4 cup avocado oil, 1/4 cup water in a large pan on medium heat

▹  add juice from 1 lemon + sprinkle w/ 1/2 tsp pink salt

▹  cook for 3 minutes, stirring occasionally

▹  while the cauli rice is cooking, chop asparagus into ~1” pieces 

▹  at the 3 minute point, add the asparagus and crack 3 eggs into the pan

▹  cook for 5-6 minutes, stirring occasionally, until the egg is fully cooked

▹  serve immediately :)
